You might also consider Myths and Mountains out of Nevada. They have a 3-week Rajasthan tour that I know they will adapt to individuals. They know India extremely well, use a fabulous company in India with outstanding guides and definitely do NOT have cookie cutter itineraries. They will also work with you and take your ideas and give you their insights. I found them to be only marginally more expensive than if I had done it via India and a lot easier since we could actually talk on the telephone so they got to know me and my wants and needs.

Booked Geographic Expeditions from the US. They were very good and clearly very experienced in dealing with well-travled clients. I have met the Indian Far Horizons directors and staff and would recommend them to you. I can especially recommend their desert camp in Rajasthan and the visits to the Boroi villages. It's lovely to see Agra and all the forts and stuff, but the farther into Rajasthan we went, the better it got.

I should mention that flying is not always such a big time saver in India. There are often airport delays for weather, and who knows what else. From Udaipur to Dehli, yes. For shorter hops, I don't think it's worth it. Some of the drives are very very interesting.
