Chinese domestic flights' checked baggage limit for adults and children: 40kg first class, 30kg business class, 20kg economy class. No free bags for infants. Carry-on: two pieces in first class, one piece in business and economy, subject to the usual dimension restrictions, plus handbag, coat, camera, reading matter, etc.
Of course, this is all theoretical, and these rules are breached all the time.
International regulations depend upon your point of departure (which you haven't mentioned)--flights in and out of North America are subject to different regulations than those in the rest of the world. Consult the Web site of your airline for full details.

Viking Cruises states that intra country flights limit economy passengers to 1 piece of luggage with a maximum weight of 44 pounds and 1 piece of carry on with a maximum weight of 11 pounds. Verbally they told me that the Chinese airlines are quite strict about limitations. However, a friend who has been to China twice told us that their group was weighed as a whole, not individually and was over weight. She does not know what outcome was as it did not affect her. So to be safe we are going with Viking guidelines. We end up in Beijing so all our shopping will be done there as Air China flight home has the usual 70 pound, 2 pieces restriction.

The original query was about Chinese domestic flight restrictions, not cruise line ones or extra exactions imposed on tours. Chinese domestic airlines do not limit you to one piece, but only by weight, as described (I've made five domestic flights this year alone checking more than one piece, and the details given are from domestic airline tickets themselves). And as for carry on, you'll find it hard to spot a single Chinese on the average flight who has conformed to the regulations. 44 pounds, by the way, is the same thing as 20kg, and the limit quoted for international flights applies only to those to and from North America, not worldwide. Those flying to and from elsewhere should check with their airlines.
