i would suggest you look at a company called Backroads of China (www.backroadsofchina.com). They run private or small group tours in very interesting parts of China, including some that take in Yangshou and the Rice Terraces. We went with them 2 years in a row. Their prices many have changed now, but you get a guide, transportation (once you get there) all your food and accommodation in wonderful local inns. Two years ago we paid about $800 each for our 11 day tour. We added on time in Beijing (awesome - I would spend more time there - be sure to go to the Sunday dirt market) and also spent time in Shanghai (didn't like that nearly as much).
