I don't know if they're the best in town, but I found some very, very good egg tarts at the grEAT take-away food centre in the lower level of the Pacific Place mall.

I don't usually go "find" egg-tarts. But if I walk by a bakery and they just bring some fresh one out, then I'll get one. They're the best when still hot from the oven.

Funny but I was also going to say Pacific Place Mall. ISETAN department store has a food court and they sell delicious egg tarts!

One of the popular shop is called "Honolulu Coffee Shop". They have two shops, one at 33 Stanley St, Central District and the other at 178 Hennessy Rd, Wan Chai.

But I agree with rkkwan that it may not worth to "find" the shop. Simply buy the fresh, hot one at any bakery shops.
