Canggu or Ubud with a 2 year old?

The major point of differentiation for both you and your 2 year old is proximity to the ocean. If you want access to a beach then Ubud is not a good choice.
Canggu is loosely applied to several beach (and inland) communities north of Seminyak on the west coast. These include Batu Belig, Brawa, Batu Bolong, Pererenon and a few places further north near Tanah Lot. Sometimes referred to by their beach names: Old Man's, Echo etc. These are big wave surfing beaches; definitely not good swimming beaches for a small child. The community is mostly 20-30 year old Western expats. There are plenty of very good, inexpensive restaurants, spas, yoga studios and shops many with a focus on surfing and/or wellness. It's a lively and fun environment.
Ubud refers to both the town of Ubud and its suburbs and the surrounding countryside. Here the emphasis is on nature and culture. Lots of opportunities to hike, bike, explore small villages and markets. Lots of arts and crafts, dance, music and museums. Again, good, cheap food (except alcohol which is expensive), spas, wellness, shopping. Many of the resorts and villas are set along lush river valleys, set among volcanoes.
Child care is readily available all over Bali. You do however have to be very vigilant of your toddler around pools (even lotus ponds) and of course the ocean as often the person watching your child won't be able to swim themselves. Balinese love children and will be happy to take them off your hands for a while while you have a meal or shop. Wherever you end up you'll have a great time.

Ubud is quite far inland, if you want close proximity to the beach, then Canggu is your choice. And if budget is not an issue for you, I would recommend that you rent a house or villa instead
