IAH - what to do for almost four hours?

IAH - what to do for almost four hours?
our flight arrives from LAS at 3:05 pm on Saturday in November. Then our connecting flight leaves at 6:45 pm. What can we do during this time? Is staying at the airport our only option? We don't know Houston or IAH, we connected there several times but never had so much time between flights

Forgot to add that we are meeting Pat and Chris there on our way from ELP. So four of us are thanking you for a great suggestion.
We, however, have only two hours between our flights on Continental. Is this enough time for a quick dinner or just a drink?

Since I live in Houston, I seldom spend much time in the terminals and have only eaten at Pappadeux once, when my flight was delayed. Food is pretty fast, but during meal hours, you may have to wait for a table. So, it depends.
Also, if your departing gate is at the far eastern end of Terminal E or at the northern piers of C, it can be a 10-15 minute walk from the restaurant to the gate.
One nice touch is that they have flight info monitors inside the restaurant (at the far wall); so you can keep track of your flight status and gate info while there.
