Delta seat chart v Seat Guru chart
Which is more accurate? I'm assuming Delta. I'm trying to pick a seat for ATL/FCO and don't want to be over the wing, but it appears the wing is in different places depending on which chart you look at.

If you check on the 763ER Version 2 on seatguru.com it shows the wing from rows 17-28. Which is the same info as on dl.com. The "Version 1" figure is from 18-28, almost the same thing.
There's no exact definition of the location of an aircraft wing. Row 16-17 may be in front of the actual wing, but looking at pictures on airliners.net, you're parallel to the engine if you're sitting from the first row of the coach to the emergency exit.
If you're interested in taking in-flight pictures, you should get a seat as far back as possible, as even if you sit in say Row 29, you will still see mostly the wing out of your window.
