It shouldn't take long. Using automatic mode (with auto focus, image stabilisation etc) - it should be "point & shoot" and you will get great results. Make sure you set the recording mode to HDV and not DV - then you will record in Hi-Definition. The captured footage can then be edited as hi-def or down-sampled to standard definition (eg for normal DVD viewing).
Regarding differences with the models, there are some:
- HC1E takes still shots at 3 megapix & the HC3 uses approx 2 megapix (but I am sure you will be using a dedicated camera for still shots).
- With the HC1E, you have more manual controls and modes.
Personally, I don't think you will be affected in any way by going for the HC3. At the end of the day - both will record in hi-definition and that is the main thing.

I just purchased the HC3 for simple shooting while on safari, I have to say that the smaller size of the HC3 is quite nice. However, if you need more professional audio, the HC1E is the only way to go. I understand why Sony took out the external audio plug on the Hc3, as an attempt to separate their professional from mtheir casual users, but it is the one thing that I wish they would add back.
Also keep in mind that Sony makes a .7x and a 2x converters........
