Extra day
Good moring all.
We are scheduled for a 12 day adventure coming up this fall and we find ourselves with an extra day to play with.
For those of you that have been, where would you have liked to have gone that you didn't get the opportunity to because of time. Or, was there a location that you wished you had an additional day?
We will be seeing Casa, Rabat, Fes, Merzouga/Midelt, Erg Chebbi, Dades, Ouarzazate, Marrakech and Essaouira.

I definitely would not add another stop! I don't know what your allocation of days are, but depending upon your interests, I'd either add a day to Fes (very traditional city) or Marrakech (more opportunity for sightseeing) or to Essaouira (lovely, laidback coastal town).
You might want to check out my TR to see what appeals to you. A caveat: I'm not quite done yet, but Essaouira is next, so if you can wait till the weekend, I should have those photos up!

I find the question confusing, to ask for recommendations for places we DIDN’T go? And when in that itinerary will you have an unallocated day? At the beginning or end seems the most probable so where will you be before that spare day, or after? It will make a world of difference given it’s just a day.

Reasonable question. I suppose I meant if you passed through somewhere on you way to a set destination that you wished that you could have stopped and explored. Or perhaps something you heard about too late.
My apologies for the confusion.
As per the itinerary query. Our tour is 12 days but and our actual time in Morocco is 13 days. As it stands we would be spending an addtional day in Casa waiting for our departure where I would rather use that day having an addtional tour day.

And where is your last day as part of the tour, in Casa or somewhere else?
Assuming they drop you in Casa at the end, the next question would be how far do you want to go and as a day trip or spend the night. You will have been to Rabat so a suggestion for the other direction might be El Jadida. I've been to lots of places but not there, which ticks another box. There was a recent poster here who planned to go so maybe they'll return (or someone) to say how they liked it. Thorn Tree/Lonely Planet might also be a good place to ask.
As you consider places I find Rome2rio.com useful for travel time and various means of travel between starting point & destination.
Another possibility to consider might be to extend a day at your final tour destination, just ask them to add a night there for you and make your own way to Casa. That would be relatively easy as you're already there and you'll know it a bit, good for relaxing & enjoying without an agenda. If practical that's what I'd likely do.

What progol said. That’s 9 stops in 12 days. Ouch.
While Casablanca is an ugly city, it has one, giant get out of jail free card and that is the Hassan II mosque. It was my favorite single thing I saw in Morocco, which happened to be on my very first morning. I vividly remember getting there at 8;00 am, an hour before the ticket window opened and having the ginoirmous plaza and this beautiful building right on the shores of the Atlantic all to myself. It was magical and you should not miss it.
Mme Perdu’s point about where you would add time is a valid one. Assuming you have unlimited options, I would add it to Fes. Do not even think about adding another city though. Be sure to at least experience quality over quantity.

Essaouira, for me, is about the best hanging out spot in all of Morocco. So very lucky scheduling that makes it your final tour stop. You’re going to love it, I suspect, and will be glad to have an extra day to relax in this compact, pretty and entertaining place. Despite the tourist numbers I’ve always found the residents I’ve encountered exceedingly friendly & relaxed. Have a great trip.
