My favorite in that price range (I hope it is still in that price range) is the Marriott in Zamalek.

It is the perfect neighborhood to stay in. It is save, clean, and the cultural center of Cairo. There are good restaurants at the hotel and walking distance outside the hotel. There are bars, art galleries, cultural centers and more with-in easy walking distance. It has a nice pool and gym.
If you want to be near the pyramids, but not really near anything else, you might check out the Le Meridian Pyramids. It will probably be in that price range too. It has a view of the pyramids from many rooms and from the pool. The downside to it is that there is little to walk to outside the hotel safely. I don't mean you are risking rape or muggings by walking outside the hotel. That would be very rare, but you are in a poor neighborhood with lots of touts that would like to help you part with as much of your money as possible in a Papyrus Institute, Carpet School, or Perfume Factory, so beware if you do stay out at the pyramids and go for a walk. You can shop for better products at better prices in town at the Khan el Khalili.

The Conrad is a very nice hotel, but its a little north of the action and not very Egyptian in feeling. I like to be able to walk around a neighborhood. I like the hotel to look a little like the country I'm in. (See Debbie's comments on its location.)
I really like the Marriott and have stayed there for a month or so over a couple years vacationing before I moved here. And I still go there any time I'm in Zamalek so I can eat or have coffee in the Terrace Garden.
So that is my number one choice in the Nile corridor. But the Conrad is very nice.
