This Vermont-based company marched right in to Paia in 2007 and instantly became a popular restaurant and a valued addition to the community. As part of the company's mission, it started "giving back" to local nonprofits immediately. But it's not just good for its altruism; the food is fantastic. There's a big, primitive-looking, earthen, wood-fired oven from which emerge utterly delicious flatbread pizzas. The restaurant uses organic, local, sustainable products, including 100% organically grown wheat for the made-fresh-daily dough. The place is a good spot to take the kids. There's a no reservations policy but there's "call ahead seating" so you can put your name on the wait list before you arrive.

Our of all the places we ate in Maui, this was our favourite. Just back from Hana we stopped and waited the fifteen minutes it took to get in -- the place is popular and the line-up proves it. Once in, we were seated by the open oven and could watch each hand-thrown flatbread being made, from twirling the dough, applying the custom toppings and being slid into the forno oven, given a quick turn half-way, and then being pulled out bubbly and brown
on the edges. We did half-and-half, pesto and pepperoni mushroom; both sides were excellent (although the pesto would win in a contest). It's all made from locally-sourced ingredients, which I love. Reasonably priced -- our bill came to about $40, with drinks -- and the service was good.

We dined at Flatbread 3 times during our 10 day stay in Maui. Both the salads and pizzas are delicious. I loved that you could customize everything at an affordable price! I am vegan and was able to have three different pizzas (cheese free) instead of the one vegan option that is on the menu of most restaurants. The wait staff are great - very friendly and good at their job.
