Solar panels top the modern wooden barn at Quivira, which produces Sauvignon Blanc, Zinfandel, Grenache-based rosé, and other wines using organic and sustainable agricultural practices. The emphasis is on "growing wine"—farming grapes so meticulously that little manipulation is required in the winery. That said, winemaker Hugh Chappelle's mastery of technique is evidenced in wines such as the flagship Fig Tree Sauvignon Blanc, whose zesty yet refined characteristics derive from the combination of stainless steel tanks and oak and acacia barrels used during fermentation and aging. During tastings—outdoors when possible—hosts address Quivira's farming and wine-making philosophies, which guests can view in action while wandering the gardens and checking out the animals. The Chardonnays and Pinot Noirs of the affiliated La Follette Wines are poured at separate tastings.
