David Coffaro himself tends to every aspect of the wine-making process at his namesake winery, where his beloved Oakland Raiders memorabilia lines the wall behind the bar. (On game days, you might find staffers watching the action on a large screen tucked between the barrels.) Despite the relaxed attitude, Coffaro is serious about wines. He makes a handful of single-varietal wines but specializes in crafting unique blends—mixing up, for example, Cabernet Sauvignon, Petite

Sirah, Petite Verdot, and Tannat, a varietal that's popular in Europe's Basque region but rarely grown in the United States. If you're interested in learning more about the other unusual varietals that grow here, ask for a taste straight from the barrels.
