Tucked away on the ground-floor of an office block, Assinatura pulls in a well-heeled local crowd with its gourmet lunch and dinner menus. The top seller here is the surprise tasting menu, with either five or seven dishes. These might include rice-shaped pasta in cuttlefish ink with crevalle jack—a subtropical fish from the Azores—seaweed, and caviar, or an unexpectedly successful juxtaposition such as razor clams with duck gizzards served with glasswort and an onion cream. Most of the à la carte menu changes monthly, but the Vitela Maronesa grass-fed beef is a fixture and there are always three bacalhau "style exercises." With notice, they'll adapt most dishes for vegetarians.
