The Bargiacchi family, also proprietors of the lovely hotel Guelfo Bianco just next door, source much of what is on the frequently changing menu from their organic farm in the Tuscan countryside. The menu plays to all tastes—Tuscan classics such as peposo (a hearty, black pepper–filled beef stew) can be found, as well as vegetarian dishes. Even vegans have options: the seitan in salsa fredda di ceci ai capperi e rosmarino (seitan in a room-temperature pureed chickpea sauce flavored with capers and rosemary) is a winner. The wine list is well thought out, and artisanal beer is also on the menu. This tiny boîte, with a mere handful of tables, is an oasis in an area that is otherwise a culinary wasteland.
