Do you want to see mountains and maybe some high desert instead of the coastal scenery which you have plenty of in California?
Is this with your own car or a rental car?
Would you consider taking the Amtrak Coast Starlight as far as Eugene Oregon and then renting a car to see as much of Oregon as you want to see?

There are several waterfalls on the Oregon side just as beautiful as Panther Creek Falls. http://www.alltrails.com/trail/us/wa...alls-trail-137
Take the Old Columbia Gorge highway east from Multnomah Falls to see several more nice waterfalls and trails.
It is possible but not likely that you might see some snow in the Cascade passes in early November.
Were you planning on coming north on US 101 or north on I-5 into Oregon?
Roller? explain.
The Mt. Hood area is just as good as Mt. Rainier IMO.
Maybe save San Francisco for on the way back if you have time.

Yes, it's unlikely that you'll see snow in early November, but definitely plan for rain. Maybe lots of it, since November is typically one of the wettest months in the Portland area.
Except for San Francisco and Mt. Rainier, your places of interest are all in the same general area, within an hour or so east of Portland. So given the likelihood of rain, consider basing yourselves in the city and taking day trips as weather permits.
With 8 nights, I'd suggest taking I-5 from LA, stopping over 1 night (consider Ashland, OR) on the way to Portland. Spend 3 - 4 nights in the Portland area, then take the coastal route home. The Oregon coast is spectacular any time of year, but you'd also want to allow time for the redwood forests in northern CA.

I'd cut Mt. Rainier, as it's a long way from the other places you want to visit. Save it for a trip to Seattle.
No reason to worry abut the rain in Oregon - it will rain, probably every day you are there.
