Oahu - Something Special for B-day

It's my boyfriend's birthday while we are on Oahu the last week of April and I wanted to do something special/out of the ordinary for his birthday (preferably not particualry touristy - some tips from some locals would be great). I can spend about $300 on the two of us for day of fun, although less than that is also fine. We will have a rental car at our disposal so we could get to anywhere on the island.

How's about a romantic dinner at the Kahala Mandarin Oriental Hotel? You can have dinner in your own private cabana on the beach. The restaurant is called the "Cabana Seaside Grill". Here's the website:

Call the hotel and arrange a time so you can both sit in the cabana and watch the sunset. You should also mention that you are celebrating a birthday. Ask if they do anything special.

I believe the Cabana Seaside Grill was featured as one of the special dates on "The Bachelor" or "The Bachelorette".

The awesome thing about Oahu is you don't have to spend a lot of money to have amazing experiences. I'd recommend hiking to Kaena Point. It's the western tip of the island and when my husband and I hiked there we felt like we were the only people on Earth. We approached it from the western side, but you might want to opt for the northern approach with a rental car. This Web site has lots of good hiking info:

Another fabulous dining experience is La Mer at the Halekulani. Beautiful views of the water, beach and Diamond Head and amazing food. I went for my first anniversary and they included lots of extras to help us celebrate.

Thanks everyone for your great responses. I forgot to mention he is a little afraid of the ocean, and therefore, any activities associate with it (too bad for me because I love the water), so that is out of the question. The hike and the dining sound great and we will certainly make them part of the trip so thanks for the tips, but I am looking for something a little more extra-ordinary.

No one else has any more suggestions? I'll trade suggestions for unlimited advice on great, unexpected things to do in New York City.
