New Jersey Shore in Winter
How is the Jersey shore in the winter? My husband and I are thinking of doing a one night getaway without the kids. We live in PA (Philly) so our choices are
Atlantic City (not sure if I'm up for that energy)
Jersey Shore (Where to head in the winter?)
NY City (also too much going on there, I want quiet)
Poconos
Hershey Park
Want a place with good restaurants too! Thanks for your suggestions.

I would suggest Cape May. It has great hotels and B&Bs along with some of the best restaurants anywhere.

My suggestion is Asbury Park...good restaurants, clubs, shopping, boardwalk. Go on the first Saturday of the month for one of their First Saturday Celebrations. For example today will be a Marde Gras with Jazz Bands, open art galleries, etc.
You can stay in nearby victorian Ocean Grove in a B&B or in a nearby chain motel.

There is a quiet calm along the Shore in the winter and on a sunny day, it is stunning (but Cold)... the restaurants are way less busy and very accomodating and the Inns and B&Bs are glad to see you... the shore in winter is great!

I like the responses so far (of course you are not going anywhere this weekend from what I can see on the weather channels for the East Coast.)
For the Jersey Shore, I would also suggest someplace like Spring Lake, which has a very nice downtown with lots of restaurants and shops and also has some nicer small inns, try the Hewitt Wellington see http://www.thehewittwellington.com/. You need a year-round town, as places like Stone Harbour and LBI tend to be shut up in the winter and you would have to drive fairly far for restaurants. So north Jersey would be better as those are more year-round communities (although Cape May probably still works). Sea Girt which is nearby may also work, as would Bay Head, although Spring Lake has a better downtown area.
Also try vrbo.com for rentals of homes at the Jersey shore (or elsewhere), to the extent people rent their house in the winter, you may be able to get some really lovely beachfront homes or condos (these are limited) quite cheaply.
The Brandywine area on the border of Pennsylvania and Delaware is close to you, and is a lovely area of the country. There are Longwood Gardens and the Winterthur Museum if you are interested in colonial American and other antiques. The area around the river is interesting as well and I imagine there would be some walking/hiking (or snow shoeing/cross country) opportunities. Take a look at http://www.longwoodgardens.org and http://www.winterthur.org. A hotel and/or restaurant suggestion would be the Inn at Montchanin Village. Go to http://www.montchanin.com or slh.com
The New Hope, Pennsylvania area and across the Delaware River into Lambertville New Jersey. Cannot recco hotels, but run a search here or on-line or get a guidebook, the area is very popular, esp in the fall.
I would also recommend Skytop Lodge in the Poconos, a lovely old-fashioned family resort. (This is not one of those hear-shaped tub places, it is more like the Greenbrier or the Equinox.) There is a large lake and also golf and other activities at the resort, including skiing, walking and hiking. Take a look at skytop.com. There are many families who having been going there for many generations, but I believe you could easily get yourself away from crowds.
I would also suggest someplace like the St Michaels area on the Eastern Shore of Maryland which would not be a long drive and is really lovely, see the Inn at Perry Cabin at http://www.perrycabin.com. Should be good rates in the winter. There are other places down there. Also consider places like Rehoboth, Bethany or Lewes in Delaware/Maryland. Or a larger town like Annapolis which offers many restaurant options and a good bit of shopping and sightseeing.
You might consider the Inn at Little Washington, Washington, Virginia. Go to http://www.theinnatlittlewashington.com/. This is a very charming inn and has one of the best restaurants on the east coast, and probably one of the 5 best in the country, IMO. Also in a lovely area about an hour from Washington DC, not sure if this distance is in your consideration.

Engleside Inn in Beach Haven on Long Beach Island has lovely oceanfront rooms, an excellent restaurant open for dinner Thursday through Sundays, refrigerators and microwaves in many rooms, whirlpool tubs in some rooms - but not, sadly, those on the ocean front.
It is close to shopping and some decent breakfast restaurants and walking distance from the little Long Beach Island Museum and the Surflight Theater. The latter does have some productions in winter.
We've been spending a few winter days there for more than 30 years and thoroughly enjoy it.

Ocean Grove, very romantic town with B&B. You can walk around the town. There is also Bradly Beach next town over which is nice, Avon by the Sea is nice. I love them all. My fav is Asbury Park since they redid it. Great nightlife even in the winter.
