Clubs:
It all depends what night you go out. Each club has good nights they are known for. For example on a Tuesday, the only real happening place is 54 at MGM, Wednesday's its Ra at Luxor, etc...
The good clubs bar on weekends (and I am sure some weeknights also are:
Light at Bellagio
Ghostbar at Palms (more loungy)
Rain at Palms
Baby's at Hard Rock

Hotels: Bellagio, Venetian, Mandalay Bay/Four Seasons. If those are too $$$ - Mirage, Paris, are also great and cheaper. Treasure Island is a great bargain choices too.
Shows: Mystere the best i.m.o. - "O" also stupendous but $$$ - Penn & Teller good too. That's all I've seen. There's also Siegfried & Roy and Wayne Newton of course.
