The easiest way is 99 to Bakersfield. Take 58 through Tehachapi and Mojave to Barstow, then get on I-40 and head east. You'll go through the southern Rockies in New Mexico. I grew up north of you, and this is the route we always took to visit family.

That is a very hot route. What is the concern about your vehicle? If the you stick to the interstate systems the climbs are generally pretty gentle and tunnels are used. None of the old switch-back style of roads I-80 across Wy is fairly low. I-70 across CO is fairly gentle with the except of the climb over Vail pass and the run to the tunnels are the divide.

When you get to Tennessee and NC you will want to stay on I40. There are some mountain grades there also but from Asheville on, you are descending.
In Kansas there are dog friendly motels along I70. I generally drive from Denver to around Columbia, MO in a day and in a long day can get to Charlotte the next day--to give you some idea. It is 1600 miles-Charlotte to Denver.
