For what it's worth...
You will see a LOT of red sandstone in UT and AZ on your trip, including Natural Bridge in Bryce.

For me, 7hr boat ride to see Natural Bridge would not be worth it. It's on my list of place to visit when I have the time to hike & camp, but not as a day trip.
Save your travel energy for enjoying the rest of your trip...

For me it was worth it just to be on the boat with those sandstone walls around you. It was a beautiful ride. When you start out, it's pretty much open water but the closer you get to Rainbow Bridge the passageways become narrow and I thought so awesome.

We stayed at the Lake Powell Resort and just purchased tickets 2days prior. It takes 2hr to reach the Bridge area by boat and an hour and a half hike to the reach Bridge, walk around, and come back to the boat. We were there last July and it was really, really hot.

I would take this boat tour: http://www.lakepowell.com/play/boat-...e-canyon-.aspx I cannot tolerate the kind of heat we had last July. It was 109 and humid but the canyons are beautiful and the boat does offer shade.

You question regarding hiking to Rainbow Bridge (another way).
The answer is Yes.
Hike, but.............
Route is through Navajo Nation which, of course, requires a permit that can be purchased at their ranger station near the junction of hwy 89/64 Mon-Fri normal working hours. Not expensive - I think it is $7 now.
