Disney World with kids for the first time

Taking kids to Disney world for the first time. My wife and I have been there multiple times so we know what to expect, however, we haven't been since 2004. Our daughter is 6 and son will be very close to turning 5. We are staying at the Polynesian since we have heard so many good things about it from family and friends and want to be closer to the Magic Kingdom side. If you have stayed there, please give your opinion of this resort (i.e. rooms, pool, character breakfast, etc.).

My son's favorites are Cars and Toy Story. I know that there are some rides geared toward these movies but I'd like to know if there are any other attractions for Cars and Toy Story that we should not miss. I heard something about taking a picture with Lightning McQueen. Is that at Hollywood Studios?

We have a reservation at the bibbidi bobbidi boutique for my daughter and then we are planning to eat dinner in Cinderella's castle immediately after. Has anyone experienced this and if so, how was it?

We are planning on going to all 4 parks and would love to hear about anything that we should NOT miss out on that my kids would love.
