4-5 day active vacation/road trip from NY/NJ
My husband and have 4-6 days without kids in early July that we would like to spend in an active vacation. We would start from Newark, but can go in either direction from there. We considered possible destinations, including road trips to up-state NY, Canada, or Pennsylvania mountains.. or?
Want to spend time seeing something beautiful, hiking, and spend nights in comfort too (no camping). We are not looking for very touristy places, more on a side of nature, small interesting towns, maybe organized active trips? Any suggestions of where we could go /stay/ what to explore would be most welcomed.

I can think of no more interesting small town in PA than Wellsboro (Tioga County). The man that named the Pine Creek Gorge Pennsylvania's Grand Canyon was my HS history teacher.

My cousin who has lived in Wellsboro all his life was in my HS class and is in charge of the linked website.
Wellsboro has some good hotels including the Penn Wells.
If you wanted to stick with upstate New York, try Watkins Glen.

The Finger Lakes offers the ideal trip for you...
Drive up to Watkins Glen Harbor hotel, stop at the state park... Side trip to Corning glassworks, wine country, Ithaca, and then head north and drive along amazing Route 20, through villages, historical sites to Letchworth State Park, known as "the Grand Canyon of the Easr".
Along the way, do some antiquing, boating, nature, and history and stay at some of the most amazing classic hotels in Geneva ... On the return trip, loop around another lake and follow along the southern part of the state... Have fun!

Second the Finger Lakes recommendation.
You might also consider The Mohonk Mountain House in the Hudson Valley.
