Puerto Vallarta
We are planning a trip to Puerto Vallarta, this would be our first time to Mexico's carriblean coast, so any advise, How safe is it to rent villas there or is staying at the resorts a smarter choice.

If PV is really where you're heading, I just returned from a 10 day trip and perhaps can help.
As Cabron correctly states and I agree, Vallarta is a very safe city to visit. Renting a home, villa, apartment, staying at a local hotel or high-end resort... all are safe to do.

Okay, as my daughter put it I must feel like an idiot now. Well that goes to tell you we've never been to Mexico city or coast (either coasts), we have about one week in August and we're trying to decide where to go, which islands or coasts do you guys recommend. Are the waters in Pacific coast as nice as Carribean coast?

No the Caribbean side has MUCH nicer beaches/water than the Pacific side.
August is terribly hot and rainy season in Puerto Vallarta. I would not recommend it (and I love PV) especially for your first trip to Mexico. I won't make a very good impression.
