You can expect to move fast, long days on the bus, short stays at the sights and meals to be very basic (usually at the hotel and will be either the local version of american food or an american version of local food).
Little free time during the day and hotels at the far outskirts of whatever town you are visiting. If you want to visit the towns themselves in the evening - for student pubs or clubs - you will probably need to arrange either a shared taxi or check on local buses (but do make sure what hours they run).
Local drinking age is younger than the US - often 16 for beer/wine - but risks are the same as here (never leave a drink unattended - roofies are everywhere - or EVER let go of your purse or daypack.)

There are many threads in Fodors about EF generally, not sure about Ireland specifically.
For example http://www.fodors.com/community/euro...nt-experie.cfm
You may want to put EF in search box and see what comes up.
