Next Vacation... help me choose!

I'm not happy unless I'm planning my next trip! Problem is, I can't find somewhere that gets me excited.
I've considered:
Prague
Churchill, Canada
Grand Canyon
San Francisco
A few others

Criteria # 1, we don't do heat! Cool place or off season a must.

I live in North Carolina and am open to anything, however more than 10 hours on a plane does not excite me.

I've been to Italy and Ireland, and am anxious to return, but want somewhere first.

Budget is not an issue, I'll make it work for us at our budget.
Not interested in "Tropical."
Love History and natural beauty.

Does anyone have a place they fell in love with and would recommend?
