Italy itinerary suggestions for November
We will have 7 days in Italy, flying into and out of Rome the week of Thanksgiving. We've obtained some great ideas after reviewing prior posts and trip reports. So many choices! Considering 2 or 3 days seeing the highlights of Rome, 2 days exploring Tuscany hill towns and either 1 day Pompeii or 2 days Pompeii and Amalfi Coast depending on weather. Debating whether we rent an apartment in Rome for the entire week and do some long day trips or sample hotels in each of these areas. Thoughts or suggestions?

With just 7 days (does that include flight days?), I would recommend just sticking with Rome for 5 days and maybe a couple nights in the Tuscan countryside, or easily Rome for the whole week with an apartment rental.
Save the Amalfi Coast for when you have a week just for that area.

Is this your first trip and are you traveling from the US? If so, I wouldn't try to cram in too much. November will be a great time to visit Rome, fewer crowds. Enjoy it! Plenty to keep you busy for 5 or 7 days.
You could include a couple days in Tuscany, or just an easy day trip via public trans to:
Orvieto
Ostia Antica
Tivoli
Assisi

I also agree. Possibly split your stay 3 days in Florence at the beginning and then wind up with 4 days in Rome. This will give you a nice taste of both.
Or stay in Rome and daytrip 2 days, Orvieto and Assisi perhaps.
Definitely I would not include the Amalfi coast.
