How would you spend 11 nights in Italy?

How would you spend 11 nights in Italy?
My husband and I are taking a last-minute trip to Italy in 3 weeks from now and have to quickly come up with an itinerary.
We will be flying into Frankfurt (FF miles) them taking a low cost carrier to italy (undecided as to where, probably open jaw). We have already been to Venice, so we will be leaving it out this trip.
So, the question is: if this were your trip, where would you go? What are your favorite places and towns? How would you divide the nights?
Other info I know is usually requested.... we are in late 20's/early 30's; not a huge fan of museums (but would like to see the big ones in Florence); our main form of sightseeing is walking and experiencing the towns; we love visiting old buildings, etc (churches, palaces) We aren't big hikers/outdoorsy people either.

We leave in 22 days for the Lakes Region, Dolomites and Venice. Actually we will be eating and drinking our way through our much anticipated vacation! Shirley

I would fly into Rome, spend 5 nights in Rome, train to Florence and spend 3 nights in Florence, rent a car - but only for 3 days - to visit hill towns from a base in Tuscany (Siena, San Gimignano and Volterra, with base in Siena, or Montalcino, Pienza, Montepulciano, with base in any one of the three, return car in Florence, spend last night there, fly out of Florence.

I'd fly in to Rome for 5 nights, train to Florence for 3 nights, train to Venice for 3 nights and fly home from Venice.
Another option could be 7 nights in Rome and 4 in Florence which would give you more time to enjoy both cities.
