getting to a hotel from venice airport

Part of this depends on where your hotel is. Hopefully it has it's own dock and the water taxi can take you right there, ring the little bell, and a bellman from the hotel will come with a cart and take your luggage. If your hotel doens;t have a private dock even with a water taxi you will have to haul your luggage from the nearest public dock.
So - check your hotel's web site/map to see if it has a private dock or see the location of the nearest public dock.
If the hotel is more than 1 block from the dock - or over a bridge - and you really have a lot of luggage - I would get a different hotel - WITH a private dock. (That's all we ever get in Venice.)

Most hotels will have detailed instructions on the best way to reach them, both for private taxis as well as public transport options. The "best" answer really does vary by hotel location since some are closer to certain transport options than others.

How many of you are there ? A water taxi will be c.€100-120, although you may think this is worth it if a) you can afford it or b) there are several of you, like maybe 6.
Agree it very much depends where your hotel is - as well as accessibility by water taxi, its nearness to either Piazzale Roma or one of the Alilaguna (water bus) stops could be a factor.
From the arrivals hall, there are land buses & land taxis right outside, but both of these can only take you as far as Piazzale Roma : if you aren't very close to Piazzale Roma (and you wouldn't want to be), you'd then need to get a vaporetto (city water buses) and they tend to be crowded, so would be no fun.
It's about a 10 minute walk from the arrivals hall to both the (private) water taxi dock and the Alilaguna (public water bus) docks. There are however luggage trolleys available if you can arrange to have a 1 euro coin ready for each one you need.
If you look at a map to see how far you are from Piazzale Roma or an Alilaguna stop, don't just look at the distance but also see how many bridges are involved.
I've always stayed on or near the Zattere so it's very easy to get there via the Alilaguna boat which goes to the Zattere - hotel I used to stay in was about a 2 minute walk without bridges, apartments have been 5-10 minutes with 1 bridge.

A water taxi is fun and convenient but can be expensive. If there are just a couple of you, use the AirportLink shared owater taxi. You may have to ride a little longer while others are dropped off, but that just means you get to enjoy a bit more of the views during your first exposure to Venice.
