Drive from Evora to Sagres

Drive from Evora to Sagres
We've planned a short trip to Spain and Portugal (from France so jet lag is not an issue) and would appreciate any advice on what to see en route.
Day 1: Arrive in Seville and drive to Merida, Spain (revisiting since we love this city)
Day 2: Drive to Evora
visiting Elvas (? worth the stop), Vila Viçosa, Estremoz, (Arraiolos depending on time).
Day 3: Drive to Sagres
This will be a Sunday drive. Should we pass through Beja or head for the coast or through the mountains?
Day 4: Drive to Ayamonte, Spain
Coast drive
Day 5: Shopping for food items, return to Seville for flight home.

Day 4: From Sagres to Faro, the main road (N125, which follows the Algarve coast) usually stays 2-5km away from the shoreline, so the overall "feeling" is not as if you were driving close to the ocean.
Unless you have a specific reason, I don't think I would like to stay in Ayamonte. Tavira, still in Portugal, 20km from the border, looked much nicer. Or a beach hotel near Ayamonte, on the Islas.
