Hi Robert,
There really isn't any snorkeling to speak of on Nevis, but you can take a cat trip over to St. Kitts with Captain Knox. He hangs out at the bar at Oualie Beach.
There are many hiking trails on the island, but I'd recommend you go with a guide as a man was lost on the mountain for a week a couple of years back, but he did make it back alive. (Mt. Nevis is very steep, very dense and remote.)
There are bunches of easy to find inexpensive rests. sprinkled all over the island.
My faves - Unella's downtown, Pemo's on the northeastern tip of the island, Cla Cha Del over past Four Seasons close to Cade's Bay, Tequila Sheila's at Cade's Bay, and Eddy's downtown (a little more $ than the rest).

No, Oualie does not have good snorkeling.
Knox' cat leaves from there and goes over to a nice cove on St. Kitts for snorkeling.
If you truly enjoy good snorkeling, you will be much happier on St. Kitts. Both islands are quiet and laid back, much less densely populated that much of the rest of the Caribbean. St. Kitts has a little more variety in beaches and plenty of good hiking and restauraunts. Prices on St. Kitts are a little better and your dollars go further.
