Tasmania resort stay
We are planning our once in a lifetime trip to Australia, New Zealand and Tasmania. We have a little over a month. Currently we are set to be on Tasmania for six nights, I think. We were going to stay at Saffire for three nights but now have a chance for that to be four. Should we devote that much time to Saffire? The trip will be exhausting (we're active but in our 60s) and I wonder if we should just allow that for our R&R portion? We like scenery, good food & wine, history, wildlife, easy hikes, water.

If you only have six nights, I wouldn't stay 4 in Freycinet. There is only one walk in Freycinet around Wine Glass Bay. You could use Saffire as a base to go to other areas, I guess, like Port Arthur and Richmond. That coast is often quite dry and you don't see as much wildlife as on the west coast of Tasmania.
I think the most interesting area for walks and wildlife is Cradle Mountain--that for me is the highlight of Tasmania. There are also good walks around Launceston, like Narawntapu National Park.

Two-three nights at Freycinet is probably plenty. That'd allow a full day for the Wineglass Bay walk (which can be extended to 4-5 hours if you cross the isthmus to Hazards Beach, and follow the coastline around the base of Mt Mayson).
I'd definitely allow plenty of time for Cradle Mountain and if you have time Binalong Bay.

Have a look at my trip reports. We have spent 11 weeks all up in Tas plus another week each on Flinders and King Islands. We still have come close to seeing everything we want to see!
While at Freycinet visit the Friendly Beaches. Absolutely lovely, long white sandy beach for the romantic in you and little rocky headland to wander over for the adventure/wave lover in you. The beach is about 20km for Freycinet.

The hotel has several bars including the new renovated bistro with Tasmania's best budget priced meals and the Bistro is open every day from 12midday to 9pm each night. while there is romantic night at beach and relief from stressful environment.
