What are the MUST see's and do's in Chiang Mai and Mae Hong Son?
My husband and I will be in Chiang Mai for 4 nights/3 full days (Chedi) and then on to Mae Hong Son for 2 full days/3 nights (Fern Resort). We're going to do a 3/4 day cooking class at the Farm Cooking School one day in Chiang Mai and are starting to think about the rest of our time and want to make sure we don't miss anything fantastic. Thinking we will book a day with Sergeant Kai in CM if he's available, but this isn't set yet. What experiences can't be missed in CM and MHS?

Hi again- do go and have Tom Yum in the Ferns restaurant one evening in the Town the best ever! Fern Resort a real chill. If you are into skin treatment Mud Spa at Phu Klon Country Club . Some do and some don't but meeting the Karen Long Neck is a privallege

In Chiang Mai, I loved an early morning walk from my hotel, near the night market, down to the river, across a bridge and along one side, across another bridge and back again, all by myself. Not touristy at all, or "Can't miss", but an experience in a foreign country I won't forget.
Walking through the old walled city is great, too, and eating a whole fish from the street market - delicious.
Watching the paper hot air balloons near the gate at sunset, talking to the participants.
Foot massages everywhere!
I was there in February, and the Floral Festival Procession is definitely a "Must See" if it is on when you are there.

The Sunday night market is not to be missed in Chiang Mai. Also, spend 1/2 day visiting Doi Suthep and the Phuping Palace which is just up the paved road from the Wat. The Palace gardens are spectacular.

We stayed at Fern resort about 4 years ago. I highlight for us was to go on a hike around the hills and villages led by the resident "guide" dogs. From memory, I think there are a number of different walks of varying lengths - great fun 9even if we did get lost!).
The night market in MHS is definitely worth a visit lots of local colour from the visiting minority peoples.
A restarant we have been to a number of times in CM is "Just Khao Soi" excellent food and nice surroundings on Thanon Charoenphratet - http://www.indigochiangmai.com/wordpress/?p=119

The old city temples are well worth a visit, and if you're in Chiang Mai on Sunday, the "walking street" night market is quite good and attracts both locsls and foreigners. Wat Doi Suthep is nice at sunset, but if you want to visit Phuping Palace, be sure to get there a little earlier, as it closes 4:30 pm. If you have time, Doi Inthanon National Park makes a nice day trip.

Try to go to Doi Suthep, go to night bazaar and eat Khao soi. I love Chiang mai as I stayed there for over 10 days, so relaxing and lovely. I rent a bike and travel all around myself. One tip if you like shopping: by as much as you want there, everywhere else is more expensive.
