You've cast a pretty big net there, with 'Krabi Province'. The province includes several popular destinations, including Koh Phi Phi, Koh Lanta and Ao Nang. Given that you don't want anything over-developed, I would eliminate Phi Phi and Ao Nang. You might have a look at areas such as Railay, Koh Jum or Haad Yao (make sure it's the one in Krabi province as there are a lot of Haad Yao's in Thailand).

You don't say what type or price of accommodations you're looking for, so it's hard to give specific recommendations. Railay has some really nice resorts, along with more budget places. Koh Jum is still rather rustic, while Haad Yao has a few nice resorts at reasonable prices, but may not have many places outside the resort to eat. Koh Lanta still doesn't have that over-developed feel, and some of the beaches do have plenty of options for dining, but it's worth noting it's a fair distance from the airport.

We stayed at Phu Petra which is outside of Aonang town - about a 15 minute walk to the town. The hotel was very nice with a view towards some karst formations. Our hotel had a shuttle that one could take back and forth to town and the beaches. Aonang was nothing special but it was a good jumping off point to visit the many other islands in the area. Railay Beach was rather crowded - we didn't stay there, just spent time on the beach.

Make sure you arrange for one of the outer island day trips by either longtail or speed boat. VERY nice!

You can try Layana Resort and Spa or the Lanta Castaway Beach Resort!

Definitely get out on the water and visit some of the islands as she suggests. We did a day on the boat with a company recommended on this board and it was the best day of our stay in Aonang. can't recall the name of the little company, but you can find it by looking at my Trip Report.

Tubkaak Krabi. A small boutique resort on a great beach with amazing views. The hotel's restaurant is beautiful with great food and you can easily walk down the beach to eat at one of the other hotel's restaurants. A bit far from Ao Nang (maybe 20 minutes), but you aren't missing out on much.

I realized I cast a wide net but I wanted people to feel free to reply. Having never been there, I might overlook an area that would suit us just fine. I was thinking Railay.

We are looking in the 4-5 star range for hotels/resorts. I've concluded that some the 5 star aren't worth the price they charge, however.

I have to agree with you there. When I look at the Sunrise Tropical in Railay, which was a very nice 3-star resort on the 'wrong' beach, for $63 and then the 5-star Rayavadee for $744, I just don't see how the 5-star place is really more than 10 times better than the 3-star place. I like posh, but I also like value for money, and some of these places just don't seem like they deliver that.

Krabi is lovely province and still have beautiful beaches , I'm sure you will love it there.
For accommodation in Krabi if you're looking 4-5 star,
I and My friend would recommend stay in Rayavadee,The hotel in great location with 3 beaches (Railay,Phranang beach and Haad Nammao) with good service and friendly.

Their room is really nice, if stay in Spa Pavilion will have Outdoor Private Jacuzzi , for Hydro Pool Pavilion will have Outdoor Private Hydro Pool,but I think Deluxe Pavilion would be fine for you both and also walk not far from swimming pool (it's very big and beauty!), There also have nice Beach Bar (The Grotto) you can have good lunch and dinner at Phranang beach, and around Railay aswell.
