Among the many reasons guests of the Four Seasons Rancho Encantado often find it difficult to ever leave the gloriously situated property is this handsome yet down-to-earth restaurant that serves tantalizingly delicious and creative contemporary American and Southwestern cuisine. Young and charismatic chef Andrew Cooper cooked previously at Hawaii's Four Seasons Hualalai, which perhaps accounts for his knack for exquisitely plated seafood, from tuna tartare with avocado purée and crispy purple potato to pan-seared sea scallops with foie gras, caramelized pears, frisée, and a blood-orange reduction. Other dishes reflect a more Southwestern approach, including green chile–braised short ribs with smoked pumpkin, wilted chard, and a coffee glaze. The high-ceilinged dining room is lined with tall windows overlooking the mountains, and a side bar with a patio and fire pit is a fun hangout for cocktails and lighter bar nibbles. There's also a decadent Sunday brunch.
