Talented chef-owner Charles Dale (who previously cooked at Rancho Encantado's Terra, Daniel Boulud's Le Cirque, and at his own James Beard–lauded Renaissance restaurant in Aspen) operates this lively, modern take on a traditional French neighborhood bistro. Choose a cozy table by the fireplace and try the consistently stellar renditions of calf's liver Dijonnaise, tenderloin steak tartare with a fresh farm egg, sautéed sweetbreads with local mushrooms, and truffle frites—prices are more than fair compared with similarly upscale eateries around town. On warm days, take a seat on the quieter ramada-covered patio, where it feels like dining at a chic friend's house.
