With an eye-popping exterior design (its jagged collection of slit-shaped windows on an all-white 13-story building is meant to evoke the Colorado state tree, the aspen), this boutique hotel goes all in on the environment: everything about its thoughtfully curated design is nature-focused, from the natural textiles to the forest sounds on the elevator speakers, while its biggest flex is that it aims to be the first carbon-positive hotel in the country. Public spaces are meant to mirror a forest floor, with the lobby and second-floor gathering spaces composed of varying wood shades and earthy art installations like a draped mycelium fabric above the first-floor bar. Upon exiting the elevator to the guest floors, visitors meet a darkened hallway meant to mimic the inner workings of a tree canopy, but the guest rooms themselves are all light thanks to the aforementioned geometric windows. Much of the furniture is upcycled and/or locally sourced, and the rooms are decked out in calming muted tones and pressed local wildflower art prints; beds are comfortable, toiletries are luxe, and about a third of the rooms have built in hammock-like benches to enjoy the windows and views. The ground-floor restaurant and bar, Pasque, serves elevated American cuisine with strong Colorado flavors for all three meals and the lobby coffee bar, Little Owl, offers pastries and locally roasted coffee. The culinary highlight is the rooftop bar and restaurant, Stellar Jay, which offers a similar menu to Pasque but with a wood-fired twist, along with creative cocktails and unbeatable views of the State Capital and surrounding neighborhood. All of this would be impressive on its own, but Populus takes it a step further with its focus on sustainability. The public areas offer you cozy hangout "pods," including a comfortable area for Wi-Fi users and a game room with billiards and oversized chess and checkers tables. Rooms have green accents and hip furnishings, and the hotel has added one- to three-bedroom condos and two- and three-bedroom villas.

Wrap yourself in a big white spa robe and head directly for the 24 soaking pools that are terraced on several levels overlooking the San Juan River; as a hotel guest you'll have 24-hour access. Pick your temperature (from Tranquility to Lobster Pot) and relax. The guest rooms are housed in three buildings, the newest and poshest of which was Colorado's first hotel to be LEED Gold certified. Standard rooms in the other buildings are basic but comfortable, and the deluxe rooms and suites come with kitchenettes. And if the mineral pools aren't enough to relax you, visit the on-site spa for massage and other treatments.

Still the hottest spot in town, this Western grande dame opened for business in 1887 and has been visited by Butch Cassidy, Louis L'Amour (he wrote many of the Sackett novels here), Francis Ford Coppola, John Kennedy, and Marilyn Monroe (the latter two stayed here at separate times). The individually decorated rooms are exquisite—no surprise, as the hotel owns the country's largest collection of American Victorian antiques. The on-site Mahogany Grill serves breakfast and dinner; the Diamond Belle Saloon features live ragtime music; and the Office Spiritorium offers an escape for drinks and conversation.

Elway's restaurant ($$$)—one of three outposts of the original in Cherry Creek—serves superb steaks and seafood.

The lodge now offers a handful of hotel rooms as well. A hot breakfast is included, served at the lodge, which also serves lunch and dinner daily, with many specialties from the owners' native Poland.
