Tel Aviv

On Lilienblum and Allenby Streets, and in Florentine, where many of the pubs and bars are clustered, things don't really get started until at least 10 pm, especially on Friday night. Most places stay open "until the last customer," which means it's at least 3 am when things finally begin to wind down, although some places are still crowded at 5 am.

For those who want to start and finish the evening early, some nightspots—particularly wine bars—open before the night owls descend. Happy hours are becoming more and more popular.

Many of the cocktails here are lit up with a fiery uproar, and some come with garnishes straight out of a toy shop. It's definitely worth watching the skilled bartenders do their stuff in a room that takes you straight back to the 1920s. Small dishes are served with a bit less drama and include beef tartare, crispy calamari, and house-made fried kale chips (hard to find in Israel). It's on a side street near the northern end of Rothschild Boulevard.

Head to the hidden back entrance of a somewhat lackluster hotel lobby and discover this colonial-British-themed playground run by five of Tel Aviv's top mixologists. Nightly specials enhance the standard menu of 150 precisely concocted cocktails. Happy-hour specials (50% off) are particularly appealing, or reserve for late night, when you may be sitting next to the city's top chefs.

The elegant Jajo Vino and Jajo Bar face each other in the heart of Neve Tzedek, and both are designed with an elegant character. Each location seats only about 20 people, but these dimly lit jewels are as chic as could be. The chandeliers hanging from the high ceilings, the flickering candles on the tables, the gracefully arched windows, and the oh-so-hip clientele make them ideal for intimate conversations.
