Our order:  Two cavatelli with tiny meatballs (I guess they do eat pasta with meatballs in Italy!!) and an order of chicory.   Cooked until an unappealing dark green, this vegetable, now coming into season, was remarkably delicious, as was the pasta (5 euro per order; the chicory was 4.50 euro)

There are no bits of horseman in the pasta; they braise the horse for other dishes, and use the leftover braising liquid for the ragu.  Our waiter told us he grew up eating this dish.  Horsemeat, and donkey meat, are common on the tables of Puglia.  You cannot tell that t his is anything other than beef, or pork.

The star of the lunch: Sagnapenta (thick, fresh pasta strands with a sauce of tomato and "ragu Pugliese," made with horsemeat and ricotta forte, and topped with bread crumbs.  Ceglie is the home of ricotta forte, according to our waiter.  This doubly fermented cheese comes in a jar.
