Class IV and below ia all that they have (despite claims to the otherwise). But, they're still interesting runs, just not up to standards of the Frank Church River of No Return in Idaho. There's the Ocoee (really in Tennessee), the Nantahala and the Chatooga (really in Georgia). There may be a few others (and I may have misspelled these). Have fun.

There are several rafting centers in western NC and web search should find them. Also check ads in outdoors oriented magazines.
I think the Nantahala might get up to class IV during the spring runoff. Most outfitters located in Bryson City, NC. Have never seen a listing for class v or vi. I rafted the French Broad north of Asheville a few years ago at the end of summer and it was mild. Nothing like the Meryl Streep/Kevin Bacon movie from a few years back (I think it was call River Wild).
I'm not sure if it is open to the public, but the Atlanta Olympics white water rafting was on a man-improved to really difficult part of the Ocolee (Sp?).
Depending on where you move, you might be able to make an easy trip to West Virginia rafting.
