Have some for me, Kal. The Pinot Grigio brought on a cluster headache for me last night and it looks as if I'm going to have to be "on the wagon" tonight. Bummer on a holiday weekend.

We'll be home singing in our church's Easter cantata, then having roast leg of lamb, asparagus, and assorted trimmings.
Current poison is a diet Coke, but I have to decide whether Pinot Noir or Sauvignon Blanc will be better with the BBQ beef I have in the crockpot for dinner tonight.

Statia, Since I like you so much, I'll have TWO for yah.
Right now my drink will be lemon lime "Emer'gen C" no sugar, with MSM and a poop load of "stuff" since I'm taking off for the gym.
Got to start making room for 2 Easter dinners. Ahhhhh...family!

A low-key Easter Sunday here. First time I haven't made a big ham dinner with all the trimmings for my family. I opted out of a two-day ski trip to our mountain home-- went last weekend and thought my husband and son could use some 'boy' time this weekend. I'm enjoying my peace and quiet, going to spend this beautiful sunny day with my horse, have rented a DVD for tonight, invited a girlfriend over, chilling some wine, etc.
The 'boys' return Monday evening, and we fly to L.A. on Tuesday morning, for the rest of my son's spring break week. Praying for sunny southern Cal. weather. Rented a convertible, mostly for my 16-year-old son's enjoyment. Staying at the Westin Century City, going to visit three colleges, get re-acquainted with some of our old haunts, hopefully catch The Tonight Show with Leno and Jimmy Fallon, visit beaches, eat lobster at our favorite place-- The Crab Cooker in Newport Beach-- drive to Malibu, oggle houses in Beverly Hills ...

Went to Niagara Falls with my husband as a last minute trip. His side and my side could not figure out whose house we should go to for Easter...so we just left town! It was so nice. The falls were still somewhat frozen but beautiful, the sun was shining and we could not have asked for anything better. We stayed at the Fallsview Resort and Casino and had Easter brunch with a gorgeous view. We just got back into town.. What a great peaceful weekend.

Had some friends over for lunch. Veuve Cliequot Ponsardin, Bruscetta (should have been caviar and chopped hard-boiled eggs), Chicken salad and Strawberries, Sour cream and brown Sugar for dessert. All low Fat!

Johnthedorf, your Easter lunch sounds divine. Instead of our usual, more traditional Easter dinner we had a typical West Indian meal....curried goat.

We actually had fresh ricotta & mozzerella stuffed pasta shells, w/baked red peppers as well as some nice fresh, crusty bread from the local bakery - topped off w/a nice little French Bordeaux. Not the typical Easter fare for us. Statia, you need to tell me about the 'curried goat'.

We started with champagne, a selection of goat cheeses and spanakopita phyllo
triangles. We moved on to baked wild king salmon with a mixed greens in lemon vinaigrette. We had planned on grilling the salmon but it started to pour here at about 3:30 pm. Baking the fish was fine and we brushed it with a balsamic vinegar reduction before serving. We washed it all down with a variety of Pinot Noirs. Dessert was the Chez Panisse Almond Torte with meyer lemon curd.
Most of our dinner party had just returned from a week in Guatemala and regaled us with stories of the catholic ceremony followed by a 4 hour Mayan one. The one child in the group(16) found a picture of Jesus in his fish glaze. We credited his recent immersion in the santa semana festivities in Guatemala for his "vision".

SAnParis, although we have had goat here on the island numerous times, this was our first cooking it at home since my DH's coworker gave us some. We put it in the crockpot overnight with some onions and bell pepper, curry seasoning and cocunut milk, along with a little chicken broth. It turned out very tender and literally fell right off the bone. I love dishes that cook while I sleep.
