Po'boys that I'm familiar with, are sandwiches made with sourdough bread, a special spread, and usually fried oysters or shrimp. Described on a menu, it never sounds very tempting, but I think they're tasty. Enjoy!
p.s. if you really want food that will kill you.....go to Mother's in N Orelans...just don't look into the kitchen!!!

a po-boy is basically the Cajun answer to the hoagie or sub-sandwich....basically made by putting whatever meat/lettuce was available (for the po' boys of Louisiana) onto a loaf of french bread...expect fried seafood (shrimp, oysters, fish), lettuce, tomato, pickles, and a remoulade of some sort.
I second that motion to go check out Mother's...it's in downtown, and it's some of the best (and cheapest) cajun food I've ever had.
