Vegas - fine dining?

Wow! I am actually surprised at all the other "bad" experiences in Vegas - here I was thinking I was in the minority! I don't know, but it seems like ever since Steve Wynn sold out to MGM, it's as if Vegas went downhill for me. I mean, come on, Mandalay Resort Group is associated with Circus Circus... 
I'm hoping that maybe Wynn's La Reve will bring Vegas back up to where it should be again. Mind you, my comments about bad dining experience are all within the last 2 years, before that, I thought Vegas had great places.... but it's as if, all the places have lost it, somehow.
pippert - in my original post, I mentioned that we did not like:
Charlie Palmer (4Seasons)
Capital Grille
I also have to say that last year, we also had bad experiences (service & bad food) at:
Mon Ami Gabi (Paris)
Les Artistes (Paris)
Lawry's Steakhouse (off the strip)
I also think that despite transporting good chefs in from other areas, these restaurants still have to use waiters/servers from the Las Vegas area, and I hate to be mean, but come on, Las Vegas help is hard to find! It's as if none of these servers have had any training whatsoever. I usually tip 20-30% for great service, and I often end up only tipping 15% in Vegas.
p.s. I have to say that the new renovated buffet at TI is actually decent and only costs about $12 for lunch. It's called Dishes.

What a delight to read this humorous thread. A Steakhouse runs out of halibut! Horrors! Is halibut a type of steak?
People talk about five star restaurants as if they were Denny's.
Someone doesn't like Charlie Palmers but does like the buffet at Treasure Island? Fine dining?
Misinformed people claiming that none of the restaurants have the original chefs as if their flagship ones did.
I strongly suspect most of these people have never experienced fine dining.
