The Pacific War Museum is in Fredericksburg which was Chester Nimitz' hometown. You can see a small Japanese submarine that was in Pearl Harbor on 12/7/1941.
There are a couple good German restaurants in town.

From College Station (location of the George H.W. Bush Library), I'd drive to Fredericksburg and stay for 2 nights. It's a lovely little town with some German history in addition to the WWII history that you will find at the Pacific War Museum (formerly known as the Nimitz Museum). From F'burg, you can easily drive to the LBJ National Historical Park and the LBJ State Park and Historic Site in Stonewall, Texas. Both are worth visiting. I'd wait to see the LBJ Library until you get to Austin.

Let me just remind you of my restaurant recommendation from my posting in February, Cabernet Grill. I don't think you'll be disappointed.

Fredericksburg doesn't have that many hotels. What it does have are B&Bs. They aren't B&Bs where they will serve you a full breakfast but usually will leave some type of pastries or some such and you typically rent the whole unit so it's not like you are sharing breakfast with a whole bunch ioc guests. My sister rents her two B&Bs through www.absolutecharm.com. And guesthouse Schmidt is another big agency. It's definitely the thing to do in Fredericksburg if you want to go that route.

While Fredericksburg does have many nice B&Bs, they also have plenty of hotels if you prefer that kind of accommodation. Some of the hotels chains in F'burg are: Holiday Inn Express, Comfort Inn, LaQuinta, Best Western Plus, Hampton Inn and Suites, Fairfield Inn, etc.
