The first and only time I've had halibut cheeks was in Boston at the acclaimed restaurant Olives, the early success of chef Todd English. I ordered the fairly mundane "fish and chips" and savored the best and most memorable fish and chips ever. The fish was halibut cheeks and the chips looked like french fries but were made of chick pea puree; it was amazing.

Halibut cheeks (while not cheap) are something you can find even in the supermarket here at certain times.
