In or near Pioneer Square, AL Boccolino, The Metropolitan Grill, Il Terrazzo Carmine are the high end ones. There's lots of casual and historic places like J&M Cafe, Merchant's Tavern, etc. along Yesler, and 1st Ave South. Salumi at lunch-time is a very popular spot.
Around the area of Pike Place Market for high-end I like Dahlia Lounge, Etta's Seafood, Il Bistro, Matt's at the Market, Chez Shea, Maximilliens, Steelhead Diner. For lunch and casual I like Emmett Watson's Oyster Bar, Serious Pie, Ohana, Virginia Inn, Le Pichet.

By Pike Place Market Matts and Maximelliens are terrific. I also love Cafe Campagne.
If you like Asain/sushi--walk down a few blocks to Belltown to Wann at 2020 2nd or try Wasbi Bistro.
McCormick & Schmick's (several locations) is always a safe bet for seafood and they have a super happy hour and now have sustainable Chilean Sea Bass on the menu.
