I have had great seafood at Daniel Boulud's at the Wynn..
Okada for sushi also at the Wynn has some of the best sushi grade fish, I have ever had..
You probably can't go wrong with most of the restaurants in LV..

It's Buzios, actually after the name of a town near Rio de Janeiro. I took a peek at their menu last Saturday but went over to Hamada's for some disappointing sushi.

The seafood buffet at Rio is closed.

I also would recommend Buzios. I have eaten there a few times and have not been disappointed. Also, the Venetian has a good Seafood restaurant, although the name escapes me right now.
