We really liked Taberna and its sister restaurant La Boca. Also Paper Dosa but they don't take reservations for smaller parties so I don't know if it would be difficult to get in on a Saturday night.

Tia Sophia's - breakfast & lunch
Café Pasquals - breakfast, lunch *excellent molé
The Shed - best red chile, great courtyard, excellent margaritas (not house)
Del Charro - green chile cheeseburger
Harry's Roadhouse - breakfast
Tomasita's - yummy sopapillas
Tune-up Cafe - breakfast or lunch (excellent molé here, too)
Coyote Cantina - rooftop dining. Food is ok but we enjoy getting a seat along the wall for sunset views and people watching
Geronimo - still going strong. Nice menu and vegetarian options, too, that are delicious.
La Boca - tapas place so not large portions but meant to order several for dining. Sister restaurant, Taberna, is almost as good and a little less $$. Both have happy hour specials worth checking out.
La Casa Sena - beautiful courtyard dining for lunch or dinner
Anasazi - patio dining is nice. Great tuna tacos.
Bistro 315 - great wine list as well as prix fixe menu, too.
Check out The Bell Tower @ La Fonda hotel for views and a cold beverage. On the 5th floor.
I'm sure I've left some out but this is a good start.
Enjoy Santa Fe!!

How could I have forgotten La Boca? It was wonderful! I also just remembered an amazing French bakery, Clafoutis, which is a short drive from the Plaza. We got a sack of croissants and brioches every day to narffle in the car on those long scenic drives
We also enjoyed the Compound for a fancy night out, although you can eat in the very charming bar, too, where the food and atmosphere are more casual.
