Go fruit picking at Greigs's farm in Red Hook,
Antiquing, check out what's going on at the Rhinebeck Fairgrounds (depends on when you're going)
View an oldtime airshow at the Rhinebeck Aerodrome.

And Franklin Roosevelt's house is in Hyde Park, not too far. Eleanor's estate is near CIA. You can tour both.
Wilderstein is a small mansion, fun to tour with a lovely view of the Hudson. You can walk down the paths close to the river too.
The Vanderbilt estate is nice to visit and a short drive too. They have a terraced Italian garden that's being restored.
Rhinebeck itself has lots of little shops to browse in.
So plenty to do in an afternoon. Have fun.
