Not much to add.
I do have to go to the WWII museum we missed last year.
The rest of the time it's walking around, shopping, eating and people watching, waiting for night to fall.

There are some great ideas above. I would also add the Audubon Zoo (one of the country's best) and the Aquarium. Both have white gators. Jean Lafitte Park is very wild with snakes, gators and giant spiders on the loose.
For nighttime, Napoleon House and the bar of the Columns for history and atmosphere, Pat O'Brien's for tacky fun (a flaming fountain!), live music at House of Blues or Tipitina's, and the
Lion's Den to hear Irma Thomas!
